if you root your phone using this do you lose all your apps or does it keep the phone in its current state but just gives you root access?

Yes. Everything stays on the phone, just adds the "su" and "busybox"-executables and an apk to control the su.

"root" under UNIX OS, is more or less the same as "Administrator" under M$ Windows.
I'm not an Linux expert but I can say some little things: on UNIX files have permission (user/owner/group) root has all right. Some proccess need to be executed under root permission.
Android is according to google a platform. Android is based on a patched linux kernel, in fact you can put a debian (ARM) image on your phone and run a real linux environnement with just a few tweaks needed. On Android there is no real user (I mean it's a generic username) root is not available, because of the potent security issues. That mean: on a rooted phone you have to be carfull: never let all app gain root permission (anyway it's not going to happend, because of the way "su" is implemeted on Android

and blahblahbla

In fact only a few app need to root (swap thing, file explorer who can access to /system partition, wifi/usb tether and so on)

to root or not to root depend on your need. I NEED root since I really like to 100% control my phone (and because some of my apps need root)

Standart user /n00b really don't need to root their phone, furthermore if they don't understant it

Hope this post was a little usefull (for me it was I had 5min before leaving work \o/)

I suggest you to have a look to XDA forums, coz they have great DEVs / ROM cookers, maybe ther is something for you phone.
Honnestly I bought my HTC Hero first because it's running android, second because I know there is a community developping ROM for this model. I'm using 2.1 since a long time & technicaly I can use a froyo (2.2) but doesn't seems stable enough for my Hero
