If I had to pick any books, grudgingly, it would be -

Jack Vance's Dying Earth tetralogy or
Gene Wolfe's The Book of the New Sun quadrilogy.

I'd like to see Ralph Ellison's Invisible Man and Robert Heinlein's Stranger in a Strange Land adapted as a movie or short series.

None, to be honest. All the changes made to turn absolutely incredible books into "blockbusters" (utter b.s.) the past decade just killed that idea for me completely.
Whenever I hear a book is being made into a movie/series, I cringe inside knowing they'll just screw it up beyond recognition. It's sad and disrespectful what's been done to most excellent books lately. Damn sad.
