I was just doing a general "No root" search for apps and it seems there's not a huge selection. Does almost everything require a rooted device?

Do all the games etc. need my device to be rooted? Or do certain things work without a root but don't need to be stated so. I think my main question is: how do I differentiate between what needs a rooted device and what doesn't in releases that don't state anything?

Not at all. Check the description for the app and you will find out.

If you login on Mobilism you can use the search bar (top right) to search for apps/games and to be honest it normaly says in the decription if the app needs root or not. i havent installed one game thats needed root and i've installed 100+ over the years.
